This unusual hexagonal surface ripened goats€ milk cheese is produced near the Lyon region of France with milk that has been specially filtered to yield a silkier texture. The white, corrugated rind is uncommonly supple and tender and adds an interesting texture contrast to the luscious, whipped-to-runny texture of the interior.
